How to make Potato Roses
I saw this on Pinterest and just had to try it !
What You will need:
- a mandolin/handguard
- large mixing bowl
- muffin tin
- foil
- 4 potatoes, halved (whatever potatoes you like)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon black pepper
- 1 teaspoon salt
- 12 strips center cut bacon
- fresh thyme, to serve
- grated parmesan cheese, to serve
You'll need to preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). It's good to get this step done so you are not waiting when your roses are ready to bake.
Thinly slice the potatoes and place them in the mixing bowl. Add the oil and seasonings to the potatoes, making sure to coat them evenly.
Now, on a cutting board, take 2 strips of bacon. Lay them out vertically, so the 2 ends overlap slightly.
Place the potatoes, overlapping slightly, onto the strips of bacon. You'll want them to roll up nicely. Leave a little bit of bacon at the end....
Begin rolling the bacon slowly and gently. you'll notice as you get towards the end, how the rose is formed.
Carefully place the rolled rose into the muffin tin. This will help keep it's shape.
Repeat until all 6 roses are complete.
Place the muffin tin gently into the oven. Cooked uncovered for 20 minutes. Use tin foil to cover the roses and cook for another 30 minutes.
Top the roses with some shredded parmesan and then bake for 5 minutes or so, until the cheese is fully melted.
