Pork Fried Rice
Hubby and I have been craving Pork Fried Rice and our local chinese restaurant has let us down too many times. My best friend makes to best that we’ve ever eaten, so I did my best to replicate hers.
This was the best I think I have eaten and even better that I made it from scratch. This is a recipe I will come back to over and over again.
Pork Fried Rice

Ingredients:
- 4 slices of bacon
- 2 cups cooked rice cooled
- 3 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup frozen peas and diced carrots blend
- 1/2 cup frozen diced onions
- 3 large eggs lightly beaten
- In a large skillet, cook bacon on medium high heat until crispy. Once the bacon is cooked, transfer to a separate plate and set aside. Leave Bacon drippings in pan.
- Begin to cook the rice while you prepare the rest of the meal.
- Next add the frozen peas and carrots & frozen onion blends to the pan and sauté for approximately 2 minutes on medium high heat.
- Slide the vegetables to one side of the pan and pour in the eggs into the pan on the open side.
- Scramble the eggs.
- Crumble bacon into small pieces and add to pan,
- Add in the cooked, cooled rice, soy sauce, salt and pepper to the pan.
- Stir for a few minutes until rice is heated through and slightly browned.
- This is rea=ady to eat as is, or you can servide as a side with your desired protein (steak/chicken).
