Try this Cheesy Pesto Chicken

We are all about trying new recipes. Since I am not at work because of the Coronavirus Quarantine, it’s easier to get back into researching & trying new things. Here is one that I knew my whole family would absolutely love.

I made a couple of the chicken breasts without tomatoes, because I do have some picky eaters. This recipes is easy to tailor to your family.

I found this recipe through Pinterest from Melanie Cooks. I adjusted the portion size to my family.

Cheesy Chicken Pesto

Description of Recipe

Makes: 5 Servings

Ingredients:
  • 5 boneless skinless chicken breasts
  • 4 oz pesto
  • 2 tomatoes sliced (your choice)
  • 5-7 slices mozzarella cheese
  • 1 tsp salt
  • 1 tsp Italian seasoning (optional)
  • 1/2 tsp pepper (optional)

Instructions:
  1. Preheat the oven to 350F.
  2. Rub the chicken breasts with salt, then place in a 9x13 inch baking dish in a single layer.
  3. Spread the pesto on top of chicken.
  4. Put Mozzarella cheese slices on top of pesto.
  5. Put tomato slices on top of cheese
  6. If desired, sprinkle with Italian seasoning and pepper on top.
  7. Put the chicken in the oven and bake for 30 minutes, or until internal temperature of the chicken is 165F.
  8. Serve with desired sides & vegetables.
