Try this Cheesy Pesto Chicken
We are all about trying new recipes. Since I am not at work because of the Coronavirus Quarantine, it’s easier to get back into researching & trying new things. Here is one that I knew my whole family would absolutely love.
I made a couple of the chicken breasts without tomatoes, because I do have some picky eaters. This recipes is easy to tailor to your family.
I found this recipe through Pinterest from Melanie Cooks. I adjusted the portion size to my family.
Cheesy Chicken Pesto

Ingredients:
- 5 boneless skinless chicken breasts
- 4 oz pesto
- 2 tomatoes sliced (your choice)
- 5-7 slices mozzarella cheese
- 1 tsp salt
- 1 tsp Italian seasoning (optional)
- 1/2 tsp pepper (optional)
Instructions:
- Preheat the oven to 350F.
- Rub the chicken breasts with salt, then place in a 9x13 inch baking dish in a single layer.
- Spread the pesto on top of chicken.
- Put Mozzarella cheese slices on top of pesto.
- Put tomato slices on top of cheese
- If desired, sprinkle with Italian seasoning and pepper on top.
- Put the chicken in the oven and bake for 30 minutes, or until internal temperature of the chicken is 165F. Serve with desired sides & vegetables.
